500 gr Jambal Roti Salted Fish
5 Green Chilies
3 Red Chilies
2 Red Birds Eye Chilies
1 Tomato, cut
3 stalks Lemon Grass, bruise to release flavor
2 cloves Garlic, minced
2 Shallots, minced
5 tablespoons Vegetable Oil
2 teaspoons Salt
1 teaspoon Sugar
1 teaspoon Black Pepper Powder
Water
Directions :
1. Pour water in small bowl, sprinkle with 1 teaspoon of salt, mix it well. Soak Jambal Roti salted fish in salted water to reduce a little bit the salty taste of the fish. Set aside for 1 hour.
2. Heat vegetable oil in medium skillet, deep fried salted fish until golden brown, set aside.
3. Still using the same vegetable oil, saute garlic and shallots until fragrant. Put in the chilies and lemon grass, stir it.
4. Place fried salted fish into the skillet, season with 1 teaspoon salt, sugar and black pepper powder.
5. At last, put in tomato, stir fry for 1 minute, serve.
