2 bunches Long Bean / Snake Bean, cut into 4 cm long
2 Red Chilies, sliced crossly
2 Green Chilies, sliced crossly
2 Bay Leaves
3 cm Greater Galangal, bruise to release flavor
3 cloves Garlic, chopped finely
3 Shallots, chopped finely
1/2 teaspoon Salt
1/2 teaspoon Sugar
2 tablespoons Vegetable Oil
A little Water
Directions :
1. Heat vegetable oil in a wok, saute garlic and shallots until fragrant. Put in red and green chilies, bay leaves and galangal. Stir fry for about 1 minute.
2. Places long bean into the wok, add a little water. Season with salt and sugar. Stir fry for about 5 minutes until the beans tender. Serve.
